3 and 3+1 Day Safaris
A 3-day safari is a great quick trip. The difference between the 2 and 3-day safaris is the additional day in Lake Manyara. 3 days is still short to make it into the Serengeti, however, the three parks visited have ample opportunities for spotting most of the sought after wildlife.
Sample Itineraries

3+1 Day
Day 1: Drive from Moshi to Lake Manyara National Park. Full day game drive and overnight camping.
Day 2: Drive to Tarangire National Park. Full day game drive, then overnight at Tarangire Safari Lodge.
Day 3: Drive into Ngorongoro Crater. Half day game drive, then return to Arusha, Moshi, or JRO for an evening departure.
Day 1: Drive from Moshi to Tarangire National Park. Full day game drive and overnight at Tarangire Safari Lodge.
Day 2: Drive to Lake Manyara National Park. Full day game drive, then overnight camping.
Day 3: Drive into Ngorongoro Crater. Full day game drive and overnight at Endoro Lodge.
Day 4: Drive to Arusha, Moshi, or JRO for morning or afternoon departure. Souvenir shopping and options for museum visits, etc. along the way.
